Ingredients
- 1kgpork shoulder or belly, cut into small cubes
- 200gpork liver, cut into small cubes
- 3tbspcooking oil
- 1piecemedium onion, chopped
- 4clovegarlic, minced
- 1piecelarge tomato, chopped

- 1cupwater
- 2piecemedium potatoes, peeled and diced
- 2piecemedium carrots, peeled and diced
- 1piecered bell pepper, diced
- 1piecegreen bell pepper, diced
- 1cupgreen peas (optional)
- 2tbspsoy sauce
- 2tbspfish sauce (patis)
- 1tbspsugar
- Salt and pepper, to taste
- 1/2cupraisins (optional)
- 1/2cupgarbanzo beans (chickpeas) (optional)

How to make Pork Menudo
In a bowl, mix the pork cubes with soy sauce and set aside for about 15-20 minutes.
In a large pot or deep skillet, heat the cooking oil over medium heat.
Add the garlic and onion, sauté until the onion becomes translucent.
Add the chopped tomato and cook until it softens and starts to break down.
Add the marinated pork cubes and cook until they start to brown on all sides.
Add the pork liver and cook for another 2-3 minutes.
Pour in the tomato sauce and water. Stir well.
Add the fish sauce, sugar, bay leaves, and season with salt and pepper. Bring to a boil.
Reduce the heat, cover, and let it simmer for about 30-40 minutes or until the pork is tender.
Add the diced potatoes, carrots, red bell pepper, green bell pepper, green peas, raisins, and garbanzo beans (if using). Stir to combine.
Continue to simmer for another 10-15 minutes or until the vegetables are tender.
Adjust the seasoning with more salt, pepper, or sugar if needed.
Remove the bay leaves and serve hot with steamed rice.
