A traditional Filipino dish made with pork, liver, and vegetables simmered in a savory tomato sauce.

Ingredients

6 Servings
(1 serving = 1 bowl)
  • 1kg
    pork shoulder or belly, cut into small cubes
  • 200g
    pork liver, cut into small cubes
  • 3tbsp
    cooking oil
  • 1piece
    medium onion, chopped
  • 4clove
    garlic, minced
  • 1piece
    large tomato, chopped
  • 1cup
    tomato sauce
  • 1cup
    water
  • 2piece
    medium potatoes, peeled and diced
  • 2piece
    medium carrots, peeled and diced
  • 1piece
    red bell pepper, diced
  • 1piece
    green bell pepper, diced
  • 1cup
    green peas (optional)
  • 2tbsp
    soy sauce
  • 2tbsp
    fish sauce (patis)
  • 1tbsp
    sugar
  • Salt and pepper, to taste
  • 1/2cup
    raisins (optional)
  • 1/2cup
    garbanzo beans (chickpeas) (optional)
  • 2piece
    bay leaves

How to make Pork Menudo

  1. In a bowl, mix the pork cubes with soy sauce and set aside for about 15-20 minutes.

  2. In a large pot or deep skillet, heat the cooking oil over medium heat.

  3. Add the garlic and onion, sauté until the onion becomes translucent.

  4. Add the chopped tomato and cook until it softens and starts to break down.

  5. Add the marinated pork cubes and cook until they start to brown on all sides.

  6. Add the pork liver and cook for another 2-3 minutes.

  7. Pour in the tomato sauce and water. Stir well.

  8. Add the fish sauce, sugar, bay leaves, and season with salt and pepper. Bring to a boil.

  9. Reduce the heat, cover, and let it simmer for about 30-40 minutes or until the pork is tender.

  10. Add the diced potatoes, carrots, red bell pepper, green bell pepper, green peas, raisins, and garbanzo beans (if using). Stir to combine.

  11. Continue to simmer for another 10-15 minutes or until the vegetables are tender.

  12. Adjust the seasoning with more salt, pepper, or sugar if needed.

  13. Remove the bay leaves and serve hot with steamed rice.
