A classic Filipino dish featuring tender pork belly simmered in a savory and tangy sauce.
Ingredients
- 1kgpork belly, cut into cubes
- 1/2cupsoy sauce
- 1/2cupvinegar
- 1/4cupwater
- 6clovegarlic, crushed
- 1piecemedium onion, sliced
- 2piecebay leaves
- 1tspwhole black peppercorns
- 1tbspbrown sugar (optional)
- 2tbspcooking oil
- Salt and pepper to taste
How to make Pork Adobo
In a bowl, combine the pork, soy sauce, and half of the garlic. Mix well and marinate for at least 30 minutes, or overnight for best results.
Heat oil in a pan over medium heat. Sauté the remaining garlic and onions until fragrant.
Add the marinated pork to the pan, including the marinade. Cook until the pork starts to brown.
Pour in the vinegar and water. Add the bay leaves, peppercorns, and brown sugar (if using). Do not stir immediately to let the vinegar cook off slightly.
Once it comes to a boil, lower the heat and let it simmer for 30-45 minutes or until the pork is tender. Stir occasionally and adjust the seasoning with salt and pepper as needed.
If you prefer a thicker sauce, cook uncovered for the last 10-15 minutes to reduce the liquid.
Remove from heat and serve hot with steamed rice.
