Ingredients

2 Servings
  • 2cup
    crushed tomatoes
  • 1/4cup
    olive oil
  • 1/2tsp
    chilli pepper
  • 1piece
    shallot
  • 4clove
    garlic
  • 50g
    Parmesan
  • 120g
    penny pasta
  • salt
  • pepper
  • basil

How to make Penny Arabiata

  1. Finely chop the shallot, mince the garlic, and shred the Parmesan cheese.

  2. Heat olive oil in a saucepan. Add minced garlic and shallot, and fry until lightly golden.

  3. Add crushed tomatoes, chilli pepper, salt, and pepper. Reduce heat to low and let it simmer.

  4. In another pot, bring salted water to a boil.

  5. Cook the penny pasta until al dente, about 8 to 10 minutes.

  6. Check the seasoning of the arabiata sauce. Strain the pasta and add it directly to the sauce.

  7. Mix well. If the sauce is too dry, add a little pasta water.

  8. Add a generous amount of shredded Parmesan and mix properly.

  9. Garnish with finely shredded Parmesan and chopped basil on top.

Tips & Tricks

  1. Use fresh basil for a more aromatic flavor.

  2. Adjust the amount of chilli pepper according to your spice preference.
