Pandan Layer Cake recipe

Ingredients

8 Servings
(1 serving = 1 slice)

Layer Mixture A

  • 900mL
    coconut milk
  • 150g
    sugar
  • 37g
    instant jelly powder
  • 1tsp
    pandan paste

Layer Mixture B

  • 375mL
    coconut milk
  • 75g
    custard powder
  • 1 1/2tsp
    hoen kwe flour

Cake and Garnish

  • 2piece
    pandan sponge cake
  • desiccated coconut

How to make Pandan Layer Cake

Prepare the Mixtures

  1. Mix ingredients in group A together.

  2. Mix ingredients in group B together.

Cook the Mixture

  1. Bring mixture A to a boil. Once warm, add mixture B.

  2. Cook until the mixture boils and becomes sticky.

Assemble the Cake

  1. Pour the hot mixture between the layers of the pandan sponge cake to create a sandwich effect.

Tips & Tricks

  1. Ensure the mixture is hot when pouring it onto the cake for better absorption.
