How to make Fried Rice
Preparation
. Prepare the Rice:
If you don't have leftover rice, cook 2 cups of rice and let it cool completely. Cold rice works best for fried rice as it is less sticky.
Cook the eggs
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Sauté the vegetables
In the same skillet, add another tablespoon of oil. Add the diced onion and cook for 2-3 minutes until soft.
Add the mixed vegetables (frozen or fresh) and minced garlic. Stir-fry for 3-4 minutes until the vegetables are tender.
Combine rice and soy sauce
Add the cold rice to the skillet, breaking up any clumps. Stir everything together for 3-4 minutes to heat through.
Add the soy sauce, oyster sauce (if using), and sesame oil. Stir well to coat the rice evenly.
Add protein
If you're using chicken, shrimp, or tofu, add it now and mix everything well.
Add the eggs
Add the scrambled eggs back into the skillet and stir everything to combine.
Mixe the vegetables
Season and garnish
Taste and season with salt and pepper. You can also add extra soy sauce if desired.
Serve
Serve hot as a main dish or a side dish to your favorite Asian meal. Enjoy!
Tips & Tricks
For a richer flavor, you can add a splash of fish sauce or hoisin sauce.
You can also add chili or hot sauce if you prefer a spicier fried rice.
If you want to keep it vegetarian, just omit the protein and add extra vegetables or tofu.
