A delicious and easy recipe for honey roasted carrots with a hint of cumin and paprika.
Ingredients
- 1/2kgcarrots
- 1pieceyellow onion
- 3cloveminced garlic
- 2tspchopped chives
- 1/2tspcumin powder
- 1/4tsppaprika
- 1/4tsporegano
- 1/4tspsalt
- 1/4tspblack pepper
- 3tbsphoney
- 3tbspolive oil
- 1/4cupwater
How to make Honey Roasted Carrots
Peel the carrots and divide them lengthwise. Cut the onion into medium-sized pieces and transfer them to a large bowl with the carrots.
Add all the ingredients to the bowl, reserving 1 tbsp each of honey and oil for serving.
Mix everything until well combined and line the carrots in a baking dish together with the liquid.
Preheat the oven to 190°C. Transfer the baking dish to the oven and bake for 30-40 minutes or until fork-tender.
Drizzle the reserved oil and honey over the carrots and mix.
Serve on a platter and enjoy.
Tips & Tricks
Bisect the carrots into 4 if they are too big.
Preheat your oven while mixing the ingredients.
If you have a sprig of fresh rosemary, add it on top of the carrots while they are baking. It's a flavorful game changer.
Serve the carrots on top of whipped feta with herbs or with a side of mayonnaise.
