Honey Roasted Carrots recipe

Ingredients

4 Servings
(1 serving = 1/4 of the dish)
  • 1/2kg
    carrots
  • 1piece
    yellow onion
  • 3clove
    minced garlic
  • 2tsp
    chopped chives
  • 1/2tsp
    cumin powder
  • 1/4tsp
    paprika
  • 1/4tsp
    oregano
  • 1/4tsp
    salt
  • 1/4tsp
    black pepper
  • 3tbsp
    honey
  • 3tbsp
    olive oil
  • 1/4cup
    water

How to make Honey Roasted Carrots

  1. Peel the carrots and divide them lengthwise. Cut the onion into medium-sized pieces and transfer them to a large bowl with the carrots.

  2. Add all the ingredients to the bowl, reserving 1 tbsp each of honey and oil for serving.

  3. Mix everything until well combined and line the carrots in a baking dish together with the liquid.

  4. Preheat the oven to 190°C. Transfer the baking dish to the oven and bake for 30-40 minutes or until fork-tender.

  5. Drizzle the reserved oil and honey over the carrots and mix.

  6. Serve on a platter and enjoy.

Tips & Tricks

  1. Bisect the carrots into 4 if they are too big.

  2. Preheat your oven while mixing the ingredients.

  3. If you have a sprig of fresh rosemary, add it on top of the carrots while they are baking. It's a flavorful game changer.

  4. Serve the carrots on top of whipped feta with herbs or with a side of mayonnaise.
