This simple potato salad comes together quickly and is perfect for picnics, barbecues, or a light summer side dish.
Ingredients
- potatoes, diced into - cubes
- 1cupmayonnaise
- 1/4cupsour cream
- 2tbspyellow mustard
- 2tbspwhite vinegar
- 1tbspsugar
- 1tspsalt
- 1/2tspblack pepper
- 1/2cupdiced celery
- 1/2cupdiced red onion
- 2hard-boiled eggs, chopped (optional)
- 2tbspchopped fresh parsley (optional)
How to make Easy Potato Salad
Place the diced potatoes in a large pot and cover with cold water. Bring to a boil over high heat.
Reduce heat to medium-low and simmer for 10-12 minutes, until the potatoes are tender when pierced with a fork. Drain and let cool completely.
In a large bowl, whisk together the mayonnaise, sour cream, mustard, vinegar, sugar, salt, and pepper.
Add the cooled potatoes, celery, onion, and if using, the eggs and parsley. Gently stir to coat everything in the dressing.
Taste and adjust seasonings as needed.
Refrigerate for at least 30 minutes before serving to allow the flavors to blend.
Tips & Tricks
For a tangier flavor, add a bit more vinegar or mustard.
Make sure the potatoes are completely cool before mixing them with the dressing to avoid a mushy texture.
