This simple potato salad comes together quickly and is perfect for picnics, barbecues, or a light summer side dish.

Ingredients

(1 serving = 300g)
  • potatoes, diced into - cubes
  • 1cup
    mayonnaise
  • 1/4cup
    sour cream
  • 2tbsp
    yellow mustard
  • 2tbsp
    white vinegar
  • 1tbsp
    sugar
  • 1tsp
    salt
  • 1/2tsp
    black pepper
  • 1/2cup
    diced celery
  • 1/2cup
    diced red onion
  • 2
    hard-boiled eggs, chopped (optional)
  • 2tbsp
    chopped fresh parsley (optional)

How to make Easy Potato Salad

  1. Place the diced potatoes in a large pot and cover with cold water. Bring to a boil over high heat.

  2. Reduce heat to medium-low and simmer for 10-12 minutes, until the potatoes are tender when pierced with a fork. Drain and let cool completely.

Tips & Tricks

  1. For a tangier flavor, add a bit more vinegar or mustard.

  2. Make sure the potatoes are completely cool before mixing them with the dressing to avoid a mushy texture.
