Cheesy Baked Potato, Chicken, and Broccoli Casserole

Ingredients
- 2piecelarge potatoes, peeled and cubed
- 2cupscooked chicken, shredded
- 2cupsbroccoli florets, steamed
- 2cupsshredded cheddar cheese
- 1cupsour cream
- 1/2cupmilk
- 1/4cupbutter, melted
- 1tspgarlic powder
- 1tsponion powder
- 1/2tspsalt
- 1/4tspblack pepper
How to make Cheesy Baked Potato, Chicken, and Broccoli Casserole
Preheat your oven to 350°F (175°C).
In a large pot, boil the cubed potatoes until tender, about 10 minutes. Drain and set aside.
In a large mixing bowl, combine the cooked chicken, steamed broccoli, 1 1/2 cups of shredded cheddar cheese, sour cream, milk, melted butter, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Gently fold in the boiled potatoes until everything is evenly mixed.
Transfer the mixture to a greased 9x13 inch baking dish and spread it out evenly.
Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Let the casserole rest for 5 minutes before serving.
Tips & Tricks
For extra flavor, add a pinch of paprika or cayenne pepper to the mixture.
You can use leftover rotisserie chicken for this recipe.
Feel free to substitute the cheddar cheese with your favorite cheese blend.
