How to make Tamarind Glazed Chicken Wings

Preparation

  1. Wash and cut the chicken wings at the joint to separate the mini wing and drumettes, discarding the tips. Pat dry and place in a large bowl.

  2. In a bowl, mix together tamarind paste, red chili flakes, black pepper powder, garlic, fish sauce, olive oil, honey, and sugar to create the marinade.

  3. Add the chicken wings to the marinade, ensuring they are evenly coated. Let them marinate for at least 30 minutes, or preferably overnight in the refrigerator for maximum flavor.

Grilling

  1. Preheat a grill pan over medium-high heat. Once hot, place the chicken wings on the grill pan, making sure they are not overcrowded.

  2. Grill the chicken wings for about 15-20 minutes, turning occasionally, until they are cooked through and have a nice charred exterior.
