Add the peanuts and roast them for 2 minutes. Then add almonds and walnuts. Constantly stir for 5 minutes on medium heat.
Add the prepared spice and jaggery mix to the skillet.
Stir constantly to ensure the jaggery is well coated on the nuts.
Once done, transfer to a plate or a large bowl. Sprinkle chaat masala and mix gently.
Let the nuts cool completely and serve.
Tips & Tricks
You can add or substitute nuts as per your choosing. Cashews, raisins and macadamia are good alternatives.
Nuts can be roasted in an oven as well. Mix the nuts in the spice mix made in Step 1. Preheat the oven to 180 degree Celsius and roast the nuts for 5-8 minutes or till they are golden in colour. Check constantly to avoid burnt nuts.
You can use granulated white sugar, raw sugar, honey, or maple syrup to glaze the nuts instead of jaggery.
