  • 2cups
    corn kernels (fresh or frozen)
  • 2tbsp
    softened butter
  • 1clove
    garlic (minced)
  • 1tsp
    lemon zest
  • 1tsp
    chilli flakes
  • 1tsp
    roasted cumin powder
  • 1tsp
    Kashmiri red pepper
  • 1tbsp
    maple syrup
  • 2tbsp
    lemon juice
  • 1/2tsp
    salt
  • 1/2tsp
    black pepper
  • Fresh coriander (chopped, for garnish)

How to make Spiced Buttered Corn

Cook the Corn Kernels

  1. If using fresh corn, boil or steam the kernels for 4-5 minutes over medium-high heat. Drain and set aside.

  2. If using frozen corn, thaw them and lightly sauté in a pan with a little oil or butter until heated through. Set aside.

Prepare the Chilli Butter

  1. In a small bowl, mix softened butter with minced garlic, lemon zest, chilli flakes, roasted cumin powder, Kashmiri red pepper, maple syrup, salt, and black pepper.

Combine with Corn

  1. Heat a pan over medium-high heat and add the prepared butter mixture. Sauté for about 1 minute until fragrant.

  2. Add the cooked corn kernels and stir well to coat the corn evenly with the spiced butter.

  3. Pour in the lemon juice and stir for a couple of minutes to allow the flavours to meld together.

  4. Remove from heat and garnish with freshly chopped coriander. Serve warm as a side dish or snack.

Tips & Tricks

  1. For the best flavour, use fresh corn and cut the kernels off the cob.

  2. Feel free to adjust the amount of chilli and spices to suit your heat preference.

  3. Lemon zest adds a refreshing balance to the richness of the butter.

  4. Sweetcorn is best served warm and fresh.
