If using frozen corn, thaw them and lightly sauté in a pan with a little oil or butter until heated through. Set aside.
Prepare the Chilli Butter
In a small bowl, mix softened butter with minced garlic, lemon zest, chilli flakes, roasted cumin powder, Kashmiri red pepper, maple syrup, salt, and black pepper.
Combine with Corn
Heat a pan over medium-high heat and add the prepared butter mixture. Sauté for about 1 minute until fragrant.
Add the cooked corn kernels and stir well to coat the corn evenly with the spiced butter.
Pour in the lemon juice and stir for a couple of minutes to allow the flavours to meld together.
Remove from heat and garnish with freshly chopped coriander. Serve warm as a side dish or snack.

For the best flavour, use fresh corn and cut the kernels off the cob.
Feel free to adjust the amount of chilli and spices to suit your heat preference.
Lemon zest adds a refreshing balance to the richness of the butter.
