How to make Mocha Biscuit Delight
Mix the instant coffee, powdered sugar, salt, flour, cinnamon powder, and vanilla extract in a bowl. Gradually add water and mix until the mixture becomes smooth and watery.
Mix the icing sugar, cocoa powder, and butter in a separate bowl until smooth and soft.
Line a deep flat bowl with butter paper or grease the bowl with butter.
Dip each biscuit in the mixture, then stack them in a row.
Spread a layer of ice cream, then add a layer of biscuits dipped in the mixture. Repeat until all biscuits are used, creating alternating layers of ice cream and biscuits.
Spread the icing over the top layer of biscuits with a spoon or blunt knife, and then place the bowl in the freezer for 10-15 minutes until the icing sets.
After freezing, sprinkle chopped nuts on top of the icing before returning the bowl to the freezer.
Place the bowl in the freezer for 40- 50 minutes or until the ice cream has set.
Allow it to thaw for a few minutes before serving. Create a shallow cut on top of the ice cream using a knife, then slice them into small square shapes.
Serve chilled with additional ice cream on top, if desired.
