Ingredients
- 8Chicken Drumsticks
- 1tspOregano
- 1tspMixed Herbs
- 1/2tbspBasil (dried)
- 1/2tbspBlack Pepper Powder
- 1tspCayenne Powder
- 1/2tbspGarlic Powder
- 3tbspLemon Juice
- 1/2tbspSalt
- 1/3cupOil
- 1tbspGarlic (chopped)
- Coriander leaves for garnishing
How to make Herbs & Garlic Chicken
For Marination
Rinse the chicken drumsticks and pat them dry. Make deep cuts on each drumstick.
Place the drumsticks in a large mixing bowl.
Add oregano, mixed herbs, basil, black pepper powder, cayenne powder, garlic powder, lemon juice, salt and oil to the bowl.
Rub the drumsticks thoroughly to coat them with the seasonings.
Cover the bowl and refrigerate the drumsticks for at least an hour for the flavours to blend into the drumsticks.
For Cooking
Heat a grill pan over medium-high heat.
Drizzle some oil into the pan and add the chopped garlic. Saute for about a minute or until golden.
Place the marinated drumsticks onto the pan and sear them for 4-5 minutes.
Cover the pan, reduce the heat to simmer, and cook the drumsticks, tossing them at intervals for 20-25 minutes or until the chicken is tender and fully cooked.
Check the seasonings and adjust them according to your taste. If there is excess water in the pan, continue cooking until the water evaporates.
Garnish with coriander and serve hot with lemon wedges, salad leaves or dipping of your choice.
Tips & Tricks
You can marinate and refrigerate the chicken drumsticks overnight for enhanced flavours.
Cooking time may vary depending on the thickness of the drumsticks.
You can use fresh basil leaves instead of basil powder.
Adjust the spice level and tanginess to your liking by adding more or less red chilli powder and lemon.
