Stir in the coarsely ground peppercorns and cumin, and sauté for a few seconds.
Add the sugar and a splash of water, stirring until the sugar dissolves completely.
Drain the grated apples and add them to the wok.
Simmer the mixture for 12-15 minutes, stirring occasionally, until the apples soften.
Add apple cider vinegar, salt, and the green food colouring dissolved in 1 tbsp of water.
