Green Apple Chutney - Sweet & Tangy!

Ingredients
- 1kggreen apples (Granny Smith apples)
- 1cupsugar
- 2tbspoil
- 1/2tbspginger, finely chopped
- 1piececinnamon
- 4clovecloves
- 2tsppeppercorns, coarsely ground
- 1tspcumin, coarsely ground
- 1/4cupapple cider vinegar
- 2tspsalt (divided)
- 1dashedible green colour
How to make Green Apple Chutney - Sweet & Tangy!
Prepare the Apples
Wash and peel the green apples.
Grate them, discarding the seeds, into a bowl of water mixed with 1 tsp of salt to prevent discolouration. Set aside.
Cook the Chutney
Heat oil in a heavy-bottomed wok over low-medium heat.
Add finely chopped ginger, cinnamon stick, and cloves. Sauté until the spices release a fragrant aroma.
Stir in the coarsely ground peppercorns and cumin, and sauté for a few seconds.
Add the sugar and a splash of water, stirring until the sugar dissolves completely.
Drain the grated apples and add them to the wok.
Simmer the mixture for 12-15 minutes, stirring occasionally, until the apples soften.
Add apple cider vinegar, salt, and the green food colouring dissolved in 1 tbsp of water.
- Continue cooking until the mixture thickens to a semi-thick consistency. (The chutney will further thicken as it cools, so stop cooking when it's slightly runnier than your desired texture.)
Taste and adjust the seasoning if necessary.
Remove from heat and let the chutney cool completely.
Store & Serve
Once cooled, transfer the chutney to an airtight container and refrigerate.
