Ingredients
For Marination
- 500gboneless chicken breast (cut into bite-sized pieces)
- 1inginger
- 3clovegarlic
- 3piecegreen chillies
- 1tspsalt (adjust to taste)
- 1tspKashmiri red chilli powder
- 1/2tspcumin powder
- 1/4tspbaking powder
- 1tbspkasuri methi (dried fenugreek leaves)
- 2sprigcurry leaves (chopped)
- 2tbsphung curd/yogurt
- 1tbspoil
For Frying
- 1/3cupgram flour (besan)
- 1tbspcornflour
- 1/2tspturmeric powder
- 2tbspwater (as required)
- Oil for frying
How to make Fried Chicken Bites
Prepare the Marinade
Grind the ginger, garlic, and green chillies into a fine paste and set aside.
Wash and pat dry the chicken breast, then cut it into bite-sized pieces. Transfer the chicken to a mixing bowl.
Add the ginger-garlic-chilli paste to the chicken, followed by salt, Kashmiri red chilli powder, cumin powder, baking powder, kasuri methi, chopped curry leaves, hung curd, and oil. Mix thoroughly to ensure the chicken pieces are evenly coated with the marinade.
Cover and refrigerate for at least 20-30 minutes, or for deeper flavour, marinate overnight.
Coating the Chicken
After marinating, sprinkle gram flour, cornflour, and turmeric powder over the marinated chicken. Mix well, ensuring an even coating sticks to the chicken.
Add a little water (if needed) to help the coating stick to the chicken.
Frying the Chicken
Heat oil in a large frying pan over medium-high heat.
Once the oil is hot, add the coated chicken pieces in a single layer. Let them fry without stirring for 3-4 minutes to get a crispy exterior.
Stir the chicken and continue frying, turning occasionally, until the pieces are golden brown, crispy, and cooked through.
Remove the fried chicken bites from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve hot with green chutney or your favourite dipping sauce.
Tips & Tricks
For the best results, marinate the chicken overnight.
Keep the oil at medium-high heat. If it’s too low, the chicken will absorb excess oil; if too high, it may burn the coating.
To reheat, refry the chicken in hot oil or use a deep fryer to retain crispiness. Avoid microwaving to keep the texture crunchy.
