Corn & Pasta Salad is a delightful and nutritious dish that combines colourful vegetables with a creamy mayonnaise dressing, sweet chilli sauce, and aromatic spices. It not only tantalises your taste buds but also provides essential nutrients to your body from the vegetables used.
Ingredients
- 2cupPasta (boiled)
- 1tbspMixed Herbs
- 1tbspOlive Oil
- 1cupCorn Kernels (frozen)
- 1/2cupOnion (finely chopped)
- 1/2cupCapsicum (finely chopped)
- 1cupCarrot (finely diced)
- 1/2tbspChilli Flakes
- 1tspWhite Pepper Powder
- 1tspBlack Pepper
- 2tbspSweet Chilli Sauce
- 1cupVegan Mayonnaise
- 1tspSalt
- Water for boiling pasta and corn
How to make Corn & Pasta Salad
In a pan, boil water and add the pasta, mixed herbs, and olive oil. Boil for 6-8 minutes or until the pasta is cooked. Then, strain and set it aside.
Thaw and boil the corn kernels for 2-3 minutes in a cup of water. Then, strain the corn kernels and set them aside.
Finely chop the onion, carrots and capsicum and keep them aside.
Combine boiled pasta, corn kernels, onions, capsicum and carrots in a large mixing bowl.
Add chilli flakes, white pepper powder, black pepper, sweet chilli sauce, and salt to the salad bowl. Mix everything well.
Add mayonnaise to the mixture and mix well to combine.
Cover the bowl and refrigerate to chill the pasta mixture.
Serve chilled, and enjoy!
Tips & Tricks
You can use either fresh or frozen corn kernels for this recipe. If using frozen, be sure to thaw them first.
Add chopped jalapeño or red chilli pepper if you prefer a spicier salad.
You can adjust the amount of mayonnaise according to your taste.
Servings depend on the portion served.
