Date Snack Balls

Make delicious Date Snack Balls at home and say goodbye to store-bought bars. Your kids will love these healthy and yummy treats! They are soft, filled with nuts and a perfect travel snack to satisfy hunger anytime, anywhere. Enjoy them anytime during the day!
Ingredients
- 1 1/2cupDates (pitted, soft & sticky)
- 1cupmixed Nuts (finely chopped- Almonds, Walnuts, Pistachios)
- 1/4cupPeanuts
- 1/4cupdesiccated Coconut
- 1tspOlive oil
- 1/2tspCinnamon Powder
- 1pinchSalt
How to make Date Snack Balls
In a dry skillet over medium heat, toast the mixed nuts and peanuts until they become lightly golden and aromatic. Stir them frequently to avoid burning. Let them cool before using.
In a food processor, add the soft dates, toasted nuts, desiccated coconut, olive oil, cinnamon and a pinch of salt. Blend until everything is well combined and forms a sticky, cohesive mixture.
Take about a tablespoon of the mixture and roll it between your palms to form a ball. You can adjust the size of the balls to your preference.
Roll the balls in shredded coconut for a tasty outer layer.
Place the balls on a parchment-lined tray or plate and refrigerate them for at least 30 minutes to firm up. Once they are set, transfer them to an airtight container and store them in the refrigerator. They will keep well for up to two weeks.
Tips & Tricks
Soak the dates: If your dates are not soft and sticky, you can soak them in warm water for about 10-15 minutes to make them easier to blend.
This recipe yields 13-15 snack balls depending on the size. The number of servings varies based on the number of snack balls each person consumes.
