Ingredients

  • 2cup
    Raw Peanuts
  • 2cup
    Water
  • 1
    Cucumber (diced)
  • 1
    Carrot (diced)
  • 2cup
    Assorted chopped Fruits
  • 2tbsp
    Coconut (desiccated/freshly sliced)
  • 1tsp
    Rock Salt (Sendha namak, to taste)
  • 1tbsp
    Red Chilli Flakes
  • 1tbsp
    Honey
  • 1tbsp
    Lemon Juice
  • 1cup
    Orange Juice

How to make Chilli Orange Fruit Salad

    1. Boil the raw peanuts with a pinch of rock salt in a pan over medium-high heat with enough water until they are cooked through. Alternatively, you can use a pressure cooker, allowing the peanuts to cook until they whistle twice. Remove from heat and let the pressure release naturally. Then, strain the peanuts and set them aside.
  1. Peel and dice the cucumber and carrot and chop the assorted fruits of your choice.

  2. Combine the boiled peanuts, diced cucumber, carrots, and chopped fruits in a wide bowl.

  3. Add rock salt, chilli flakes, honey, desiccated coconut, orange juice and lemon juice (if using) to the bowl.

  4. Mix the ingredients well and refrigerate until nicely chilled.

  5. Serve the delightful salad either as a light meal or as a flavourful side dish to enhance your main course.
