Ingredients
Chicken Marinade
- 700gboneless chicken, cubed
- 2tbspmedium soy sauce
- 3tbspcornstarch
- 1/2tspblack pepper powder
- 1tspchilli flakes
- 1tbspolive oil

- 4tbspsoy sauce
- 3tbspoyster sauce
- 1/2tbspsugar
- 1tbsplemon juice
Rice
- 8cupscooked rice (preferably day-old)
- 3tbspolive oil
- 1 1/2tbspgarlic, finely chopped
- 1cuponions, cubed
- 1cupcapsicum (red/green), cubed
- 2piecebird’s eye chillies, sliced
- 1/2cupspring onion greens, chopped
How to make Chicken Fried Rice (Umami flavoured)
Marinate and Cook the Chicken
In a bowl, combine chicken cubes with soy sauce, cornstarch, black pepper powder, chilli flakes, and olive oil. Marinate for 15-20 minutes.
Heat oil in a pan and deep-fry or shallow-fry the marinated chicken until golden brown and fully cooked. Drain on a paper towel and set aside.
Prepare the Sauce
Mix soy sauce, oyster sauce, sugar, and lemon juice in a small bowl until well combined. Set aside.
