Mandazi Mini Bites
When I was 14, I went to a boarding school 200km from home. My mom used to prepare mini-bites for me, and now I make them for my kids. It's a joy to see them share with their friends. You should try making them too!

Ingredients
- 4cupsall-purpose wheat flour!
- 1/2Tblspn baking powder
- 2 1/2Tblspn sugar(white sugar)
- 2 1/2Tblspn salted butter(margarine)
- 1/4Tspn cardamoms
- 1/8tspn salt
- 1egg
- 1/2cupwarm milk (for lactose intolerants replace this with coconut or almond milk)
- 3Loil for deep frying
How to make Mandazi Mini Bites
Mix all the dry ingredients in a bowl
Add butter and rub till its all crumbly
Add egg and mix
Add milk bit by bit until you get the right dough consistency
Work the dough for at least 2 mins and cover it with a clear paper wrap, let it rest for 10-15 Minutes
Preheat the oil to 190 -200 degrees celcius.
Roll out the dough to 0.6'' thickness.
Using the pizza wheel cutter, cut the rolled-out dough into 0.5" square equal sizes (the smaller they are, the crunchier they get .if you do not want them very crunchy you can increase the size to 1" square)
Deep fry them turning them till golden brown, use patching paper to drain extra oil.
Once its cooled down put them in a bowl and serve as an evening lazy snack. or any other time that you prefer, this has no rules whatsoever!
Tips & Tricks
To achieve an equal thickness size while cutting, I use the handle of the tablespoon as a cutting-edge ruler. Let me know what trick you have used on this I would love to try it too.
