Ingredients
Chicken Marinade
- 3lbchicken
- 1/2cupyogurt
- 2tbsphara masala
- 2tspginger paste
- 2tspgarlic paste
- 2tspgreen chili paste
- 1/4cupgreen chutney
- 1piecelemon, juiced
- 1tspblack pepper
- 2tspchaat masala
- 2tspcumin powder
- 2tspsalt
Cooking Ingredients
- 1/3cupcream
- 3tbspbutter
- 3tbspoil
- 1/4cupcashew
- 1/2cupyogurt
- 1piececharcoal
Green Chutney
- 1cupcilantro
- 3clovegarlic
- 2piecegreen chili
- 2tspsalt
- 1cupyogurt
- 2tspvinegar
How to make White Butter Chicken
Prepare Green Chutney
Blend cilantro, garlic, green chili, salt, yogurt, and vinegar to make green chutney. Set aside.
Marinate Chicken
Marinate the chicken with yogurt, 1/4 cup green chutney, hara masala, ginger paste, garlic paste, green chili paste, lemon juice, salt, chaat masala, black pepper, and cumin powder. Mix well and let it sit for 1 to 2 hours or overnight.
Prepare Cashew Sauce
Blend cashew and yogurt to make a smooth paste. Set aside.
Cook Chicken
Heat oil in a pan over medium flame. Fry the chicken pieces lightly until slightly brown.
Add the marinade to the pan, cover with a lid, and cook on medium flame for 15 minutes.
Add the cashew paste, butter, and cream. Mix well, cover, and cook on low flame for 5 to 7 minutes.
Add Smoky Aroma
Place a hot coal piece in an aluminum foil cup, add oil, cover, and let it smoke for 5 minutes.
Garnish
Garnish with coriander leaves before serving.
Tips & Tricks
For a richer flavor, marinate the chicken overnight.
Ensure the coal is fully heated before using it for smoking.
