Turmeric Chicken Soup

Ingredients
- 12piecechicken wings
- 3tbspfish sauce or soy sauce
- 1tspsugar
- 3head shallots, cut into small cubes
- 10clovegarlic, crushed
- 3stalk lemongrass, bottom part only
- 8piecethin slices of galangal
- 10piecekaffir lime leaves, roughly torn
- 4inturmeric root with skin on, sliced on a sharp bias
- 5piecefresh bird's eye chilies, crushed
- 3tbsptamarind juice
- Salt to taste
- Fresh chopped cilantro for garnishing
How to make Turmeric Chicken Soup
Marinate chicken wings in a mixture of sugar and fish sauce or soy sauce for at least one hour.
In a large saucepan, place all the chicken wings. Add just enough water to cover the chicken by about an inch.
Add shallots, garlic, lemongrass, galangal, kaffir lime leaves, and turmeric. Simmer for 20 to 25 minutes on low heat with a lid loosely on.
Add the tamarind juice and salt to taste once the chicken is tender. Add additional crushed chilies to the soup for spicy flavor.
Spoon the soup into a bowl, then garnish with chopped cilantro or green onions. Enjoy this dish with some steamed rice!
Tips & Tricks
Marinating the chicken wings for longer will enhance the flavor.
Adjust the number of bird's eye chilies according to your spice tolerance.
