Shaoxing Drunken Chicken recipe

Ingredients

6 Servings
(1 serving = 5 pieces)

Chicken Thighs

  • 3
    deboned chicken thighs
  • 1tsp
    salt
  • 3tsp
    Shaoxing wine

Sauce

  • 2cups
    chicken stock
  • 1cup
    Shaoxing wine
  • 2tbsp
    goji berries
  • 1tsp
    salt
  • 1/2tsp
    sugar

How to make Shaoxing Drunken Chicken

Preparing the Chicken

  1. Sprinkle each chicken thigh with a little salt and 1 teaspoon of Shaoxing wine. Wrap each thigh in aluminum foil to create packets.

  2. Heat water in a pot, place the chicken packets in the pot, and simmer on low heat for 20 minutes. Let the chicken sit in the stock for 5 minutes, then cool in ice water to retain tenderness.

Making the Sauce

  1. Combine Shaoxing wine, chicken stock, goji berries, salt, and sugar in a saucepan. Bring to a boil and let it cool completely.

  2. Pour the cooled sauce over the chicken in an airtight container. Marinate for 1-2 days for the best flavor.

Final Steps

  1. Slice the marinated chicken and serve on a plate. Drizzle with the sauce before enjoying.
