Shaoxing Drunken Chicken

Chicken Thighs
- 3deboned chicken thighs
- 1tspsalt
- 3tspShaoxing wine
Sauce
- 2cupschicken stock
- 1cupShaoxing wine
- 2tbspgoji berries
- 1tspsalt
- 1/2tspsugar
How to make Shaoxing Drunken Chicken
Preparing the Chicken
Sprinkle each chicken thigh with a little salt and 1 teaspoon of Shaoxing wine. Wrap each thigh in aluminum foil to create packets.
Heat water in a pot, place the chicken packets in the pot, and simmer on low heat for 20 minutes. Let the chicken sit in the stock for 5 minutes, then cool in ice water to retain tenderness.
Making the Sauce
Combine Shaoxing wine, chicken stock, goji berries, salt, and sugar in a saucepan. Bring to a boil and let it cool completely.
Pour the cooled sauce over the chicken in an airtight container. Marinate for 1-2 days for the best flavor.
Final Steps
Slice the marinated chicken and serve on a plate. Drizzle with the sauce before enjoying.
