Osmanthus fried wings (桂花翅)

Ingredients
- 3pieceeggs
- 50gvermicelli
- 50gcrab sticks
- 50gshredded spring onion
- 30gshredded carrots
Seasoning
- 1/2tspsalt
- 1/2tspsesame oil
- 1tspShaoxing wine
- 1tsplight soy sauce
- cooking oil
- white pepper
How to make Osmanthus fried wings (桂花翅)
Soak vermicelli in warm water until softened, then wash and cut into short lengths.
In a bowl, whisk the eggs until thoroughly combined. Tear the crab sticks into strips. Shred the spring onions and carrots.
Combine all the ingredients in a deep bowl and add all the seasoning. Whisk until all the ingredients are well combined.
Pour some cooking oil into a wok and heat to 60-70% over medium heat. Pour the egg mixture slowly into the wok and stir to disperse. Let the eggs spread out and stir-fry the mixture until dry and cooked.
Tips & Tricks
Ensure the vermicelli is well softened before cutting to avoid clumping.
Adjust the seasoning to taste if needed.
