How to make Upgraded Jollof Rice
Cooking Instructions
Rinse the rice under cold water until the water runs clear.
In a large pot, heat the vegetable oil over medium heat.
Add the chopped onions and sauté until translucent.
Stir in the tomato puree and cook for about 5 minutes.
Add the jollof spices, nutmeg, curry powder, salt, and pepper. Mix well.
Pour in the water and bring to a boil.
Add the rinsed rice to the pot and stir to combine.
Cover the pot and reduce the heat to low. Cook for about 30 minutes or until the rice is tender.
Fluff the rice with a fork before serving.
Tips & Tricks
For extra flavor, you can add diced vegetables or protein of your choice.
Let the rice sit covered for a few minutes after cooking to enhance the flavor.
