- 1tspsalt

How to make Plantain Frittata
Preparation
Peel and slice the ripe plantains.
Chop the onion, bell pepper, and garlic.
Cooking
Heat olive oil in a skillet over medium heat.
Add the chopped onion, bell pepper, and garlic to the skillet and sauté until softened.
Add the sliced plantains to the skillet and cook until they are golden brown.
In a bowl, whisk the eggs with salt and pepper.
Pour the egg mixture over the sautéed vegetables and plantains in the skillet.
If using cheese, sprinkle it on top.
Cook on low heat until the eggs are set, then finish under the broiler for a few minutes if desired.
