How to make Koose with a Twist
Preparation
Soak the black-eyed beans overnight and then drain.
Blend the soaked beans with red pepper, onion, and coconut milk until smooth.
Add salt and chopped spring onions to the mixture.
Cooking
Heat oil in a frying pan over medium heat.
Spoon the bean mixture into the hot oil and fry until golden brown on both sides.
In a separate bowl, beat the eggs and use them to coat the fried koose before serving.
