Ingredients

(1 serving = 1 cup)

Vegetables

  • 4cup
    Fresh Tomatoes
  • 3
    Red bell peppers
  • 2
    Red habaneros
  • 2
    Onions
  • 6clove
    Garlic
  • 1
    Ginger

Spices and Oil

  • 2
    leaf Bay leaves
  • 1tbsp
    Thyme
  • 1tbsp
    Rosemary
  • 1tsp
    Aniseeds
  • 1tsp
    Cloves
  • 1tbsp
    Sesame oil

How to make Jollof Stew Base

Preparation

  1. Chop the fresh tomatoes, red bell peppers, red habaneros, onions, garlic, and ginger.

  2. In a blender, combine the chopped vegetables and blend until smooth.

Cooking

  1. In a pot, heat the sesame oil over medium heat.

  2. Add the blended vegetable mixture to the pot and cook for about 10 minutes.

  3. Add the bay leaves, thyme, rosemary, aniseeds, and cloves to the pot.

  4. Continue to cook for another 20 minutes, stirring occasionally until the mixture thickens.

Tips & Tricks

  1. You can substitute sesame oil with any oil of your choice.

  2. Adjust the number of habaneros based on your spice preference.
