How to make Coconut Jollof Rice

Preparation

  1. Blend the marinade ingredients together until smooth.

  2. Marinate the chicken with the blended mixture for at least 30 minutes.

  3. Prepare the purée by blending the purée ingredients until smooth.

Cooking

  1. Heat oil in a pot and sauté the marinated chicken until browned.

  2. Add the purée to the pot and cook for a few minutes.

  3. Stir in the coconut milk, curry, seasoning, and tomato paste.

  4. Add the veggies of choice and cook until tender.

  5. Serve hot with rice or as desired.
