Ingredients

40 Servings
(1 serving = 25 g)

Main Ingredients

  • 1kg
    Raw mangoes (Ram kela / Desi Mangoes)
  • 200g
    Salt
  • 2tbsp
    Fennel seeds
  • 1tbsp
    Kalonji (Nigella seeds)
  • 1tbsp
    Fenugreek seeds
  • 1tbsp
    Turmeric powder
  • 1tbsp
    Red chili powder
  • 200g
    Sugar or jaggery or jaggery powder

How to make Zero Oil Punjabi Khatta Meetha Amb da Achaar

Preparation

  1. Wash and cut the raw mangoes into cubes, removing the seeds.

  2. Sun dry the mango cubes for 3-4 hours.

Mixing

  1. Mix the dried mango cubes with salt, fennel seeds, kalonji, fenugreek seeds, turmeric powder, red chili powder, and sugar or jaggery.

Storage

  1. Transfer the mixture to a glass jar.

  2. Keep the jar in sunlight for a week to allow the flavors to develop.

Tips & Tricks

  1. Ensure the mango cubes are completely dry before mixing with other ingredients to prevent spoilage.

  2. Store the pickle in a cool, dry place to extend its shelf life.
