A traditional Indian dessert made with basmati rice, infused with saffron and cardamom, and sweetened with sugar and dry fruits.

Ingredients

- 1cupbasmati rice (soaked in water for half an hour)
- 1 1/2cupwater
- 1tbspghee
- 1tbsprose water (gulab jal) with saffron strands (10 strands soaked together)
- 1tspturmeric powder

- 1tbspghee
- 5green cardamom
- 6cloves
- 2tbspdry fruits
- 1/2cupsugar
- 1/2cupmilk
How to make Zarda Pulao (Yellow Sweet Rice)
Take a heavy-bottomed pan and add rice, water, ghee, rose water with saffron, and turmeric.
Cover and cook on low heat until the rice is 90% done.
Heat ghee in a pan and add cardamom and cloves.
Add dry fruits and sauté a little.
Add milk and sugar, then bring to a boil.

Add the milk mixture to the rice.
Cover and cook on low heat until the water evaporates.
Let it rest for 10 minutes after removing from heat.
Serve as a dessert.
Tips & Tricks
Use aged and good quality basmati rice to prevent it from breaking or becoming sticky.
