Zarda Pulao (Yellow Sweet Rice) recipe

Ingredients

4 Servings
(1 serving = 1 cup)

Step 1

  • 1cup
    basmati rice (soaked in water for half an hour)
  • 1 1/2cup
    water
  • 1tbsp
    ghee
  • 1tbsp
    rose water (gulab jal) with saffron strands (10 strands soaked together)
  • 1tsp
    turmeric powder

Step 2

  • 1tbsp
    ghee
  • 5
    green cardamom
  • 6
    cloves
  • 2tbsp
    dry fruits
  • 1/2cup
    sugar
  • 1/2cup
    milk

How to make Zarda Pulao (Yellow Sweet Rice)

  1. Take a heavy-bottomed pan and add rice, water, ghee, rose water with saffron, and turmeric.

  2. Cover and cook on low heat until the rice is 90% done.

  3. Heat ghee in a pan and add cardamom and cloves.

  4. Add dry fruits and sauté a little.

  5. Add milk and sugar, then bring to a boil.

  6. Heat ghee in a pan and add cardamom and cloves.

  8. Add milk and sugar, then bring to a boil.

  9. Add the milk mixture to the rice.

  10. Cover and cook on low heat until the water evaporates.

  11. Let it rest for 10 minutes after removing from heat.

  12. Serve as a dessert.

Tips & Tricks

  1. Use aged and good quality basmati rice to prevent it from breaking or becoming sticky.
