Ingredients

(1 serving = 1 sandwich)

Sandwiches

  • 1cup
    red bell pepper, chopped
  • 1cup
    yellow bell pepper, chopped
  • 1cup
    green bell pepper, chopped
  • 1cup
    carrots, grated
  • 1cup
    onions, chopped
  • 1cup
    tomatoes, chopped
  • 1cup
    boiled sweet corn kernels
  • 8piece
    bread slices
  • 4tbsp
    butter
  • 12piece
    mozzarella cheese cubes
  • 1tsp
    salt
  • 1tsp
    black pepper

Dips

  • 1cup
    mayonnaise
  • 1cup
    jalapeño, chopped
  • 1cup
    green mint chutney
  • 1cup
    lime juice
  • 1cup
    tomato sauce

How to make Veggie Cheesy Sandwiches with Dips

Prepare Sandwiches

  1. Spread butter on both sides of each bread slice.

  2. Place a mixture of bell peppers, carrots, onions, tomatoes, and sweet corn on one slice of bread.

  3. Add 3-4 small cubes of mozzarella cheese on top of the veggies.

  4. Sprinkle salt and black pepper over the cheese and veggies.

  5. Cover with another slice of bread.

  6. Toast the sandwich on both sides until golden brown and the cheese has melted.

Tips & Tricks

  1. Ensure the veggies are finely chopped for even distribution.

  2. Toast the sandwiches on medium heat to prevent burning.
