- 1cupred bell pepper, chopped
- 1cupyellow bell pepper, chopped
- 1cupgreen bell pepper, chopped
- 1cupcarrots, grated
- 1cuponions, chopped
- 1cuptomatoes, chopped
- 1cupboiled sweet corn kernels
- 8piecebread slices
- 4tbspbutter
- 12piecemozzarella cheese cubes
- 1tspsalt
- 1tspblack pepper
Dips
- 1cupmayonnaise
- 1cupjalapeño, chopped
- 1cupgreen mint chutney
- 1cuplime juice
- 1cuptomato sauce

How to make Veggie Cheesy Sandwiches with Dips
Prepare Sandwiches
Spread butter on both sides of each bread slice.
Place a mixture of bell peppers, carrots, onions, tomatoes, and sweet corn on one slice of bread.
Add 3-4 small cubes of mozzarella cheese on top of the veggies.
Sprinkle salt and black pepper over the cheese and veggies.
Cover with another slice of bread.
Toast the sandwich on both sides until golden brown and the cheese has melted.
Tips & Tricks
Ensure the veggies are finely chopped for even distribution.
Toast the sandwiches on medium heat to prevent burning.
