A delicious and healthy vegan omelette made with spinach, carrot, capsicum, potato, tomato, corn, and chickpea flour.

- 1cupwater
- 1piececarrot, grated
- 1piececapsicum, chopped
- 1piecepotato, boiled and mashed
- 1piecetomato, chopped
- 1/2cupcorn
- 1cupspinach, chopped
- 1tspsalt
- 1/2tspturmeric powder
- 1/2tspred chili powder
How to make Vegan Omelette
Prepare the Batter
In a bowl, mix chickpea flour and water to form a smooth batter.
Add salt, turmeric powder, and red chili powder to the batter and mix well.
Prepare the Vegetables
Grate the carrot, chop the capsicum, tomato, and spinach, and mash the boiled potato.
Add the vegetables and corn to the batter and mix until well combined.
Cook the Omelette
Heat a non-stick pan over medium heat.
Pour a ladleful of the batter onto the pan and spread it evenly to form a round shape.
Cook for a few minutes until the edges start to lift, then flip and cook the other side until golden brown.
