This wholesome sweet corn soup is a meal in itself, full of veggies to fill you up. The sweet and sour taste, with a bit of vinegar, is just amazing. Perfect to warm you up in winters.

Ingredients
- 1 1/2cupfresh corn kernels
- 1 1/2cupwater
- 1/4cupwater
- 1tbspcorn flour or wheat flour
- 1tbspginger, chopped
- 1piecegreen chilli, chopped
- 2piecegreen garlic, chopped
- 1piecespring onion, chopped
- 1cupbell pepper (green, yellow, red), chopped
- 1/4cupFrench beans, chopped
- 1carrot, large, chopped
- 1tbspolive oil
- 750mLwater
- 1/2tspblack pepper powder
- 1tspsugar
- 1/2tbsplight soy sauce
- 2tbspvinegar
How to make Veg Sweet Corn Soup
Boil the fresh corn kernels in 1.5 cups of water for 5 minutes, then strain.
Transfer half of the boiled corn into a blender. Add 0.25 cup water and 1 tbsp of corn flour or wheat flour, and make a puree.
In a pan, heat olive oil and add ginger, garlic, and spring onion. Sauté for a minute.
Add the remaining vegetables: bell pepper, French beans, and carrot. Cook for 2 minutes.
Add the pureed corn to the pan and mix well.
Pour in 750 mL of water, then add salt, black pepper powder, and sugar.
Add the remaining boiled corn, light soy sauce, and vinegar. Keep boiling for 4-5 minutes.
Tips & Tricks
Adjust the amount of vinegar to your taste preference for a more or less sour flavor.
For a thicker consistency, add more corn flour or wheat flour to the puree.
