This wholesome sweet corn soup is a meal in itself, full of veggies to fill you up. The sweet and sour taste, with a bit of vinegar, is just amazing. Perfect to warm you up in winters.

Veg Sweet Corn Soup recipe

Ingredients

4 Servings
(1 serving = 1 bowl)
  • 1 1/2cup
    fresh corn kernels
  • 1 1/2cup
    water
  • 1/4cup
    water
  • 1tbsp
    corn flour or wheat flour
  • 1tbsp
    ginger, chopped
  • 1piece
    green chilli, chopped
  • 2piece
    green garlic, chopped
  • 1piece
    spring onion, chopped
  • 1cup
    bell pepper (green, yellow, red), chopped
  • 1/4cup
    French beans, chopped
  • 1
    carrot, large, chopped
  • 1tbsp
    olive oil
  • 750mL
    water
  • 1/2tsp
    black pepper powder
  • 1tsp
    sugar
  • 1/2tbsp
    light soy sauce
  • 2tbsp
    vinegar

How to make Veg Sweet Corn Soup

  1. Boil the fresh corn kernels in 1.5 cups of water for 5 minutes, then strain.

  2. Transfer half of the boiled corn into a blender. Add 0.25 cup water and 1 tbsp of corn flour or wheat flour, and make a puree.

  3. In a pan, heat olive oil and add ginger, garlic, and spring onion. Sauté for a minute.

  4. Add the remaining vegetables: bell pepper, French beans, and carrot. Cook for 2 minutes.

  5. Add the pureed corn to the pan and mix well.

  6. Pour in 750 mL of water, then add salt, black pepper powder, and sugar.

  7. Add the remaining boiled corn, light soy sauce, and vinegar. Keep boiling for 4-5 minutes.

Tips & Tricks

  1. Adjust the amount of vinegar to your taste preference for a more or less sour flavor.

  2. For a thicker consistency, add more corn flour or wheat flour to the puree.
