Main Ingredients
- 2tbspmustard oil
- 1onion, chopped
- 1tbspgrated ginger
- 1lbbaby potatoes with skin, cut into halves
- 2tbspachaar ka masala
- 1tspaamchur powder (optional)
- 1tspsalt
- 1tspred chilli powder
- 1tspturmeric
- 2sprigscoriander leaves

How to make Sharla Aalu / शरला आलू
Cooking Instructions
Heat mustard oil in a pan.
Add chopped onion and grated ginger. Sauté until the onion turns golden brown.
Add salt, red chilli powder, and turmeric. Mix well.
Add the halved baby potatoes and stir to coat them with the spices.
Add achaar ka masala and aamchur powder (if using). Mix thoroughly.
Cover and cook on low heat until the potatoes are tender.
Garnish with coriander leaves before serving.
Tips & Tricks
Do not peel the baby potatoes to retain their unique flavor.
