Puri Wale Aloo recipe

  • 1kg
    boiled mashed potatoes
  • 1tbsp
    desi ghee
  • 1pinch
    asafoetida
  • 1tbsp
    cumin seeds
  • 1in
    ginger
  • 5
    tomato
  • 6
    green chilli
  • 1tbsp
    curd
  • 1tbsp
    degi mirch
  • 1tbsp
    coriander powder
  • 1/2tbsp
    turmeric powder
  • 1tbsp
    kasoori methi
  • 1tbsp
    salt

How to make Puri Wale Aloo

Preparation

  1. Grind ginger and tomatoes into a puree.

Cooking

  1. Heat desi ghee in a pan and add asafoetida and cumin seeds. Let them splutter.

  2. Add the ginger-tomato puree and coarsely crushed green chillies. Cook until the mixture thickens.

  3. Add curd and mix well.

  4. Add salt, degi mirch, coriander powder, and turmeric powder. Stir well.

  5. Add the boiled mashed potatoes and mix thoroughly.

  6. Sprinkle kasoori methi and cook for a few more minutes until everything is well combined.

Tips & Tricks

  1. For a richer taste, you can add a little more ghee.

  2. Adjust the spice level by varying the amount of green chillies.
