- 1kgboiled mashed potatoes
- 1tbspdesi ghee
- 1pinchasafoetida
- 1tbspcumin seeds
- 1inginger
- 5tomato
- 6green chilli
- 1tbspcurd
- 1tbspdegi mirch
- 1tbspcoriander powder
- 1/2tbspturmeric powder
- 1tbspkasoori methi
- 1tbspsalt

How to make Puri Wale Aloo
Preparation
Grind ginger and tomatoes into a puree.
Cooking
Heat desi ghee in a pan and add asafoetida and cumin seeds. Let them splutter.
Add the ginger-tomato puree and coarsely crushed green chillies. Cook until the mixture thickens.
Add curd and mix well.
Add salt, degi mirch, coriander powder, and turmeric powder. Stir well.
Add the boiled mashed potatoes and mix thoroughly.
Sprinkle kasoori methi and cook for a few more minutes until everything is well combined.
Tips & Tricks
For a richer taste, you can add a little more ghee.
Adjust the spice level by varying the amount of green chillies.
