Malai Rabdi with a Healthy Twist

A delicious and healthier version of traditional Malai Rabdi without using cornflour or bread.

Ingredients
Main Ingredients
- 1Lfull-fat milk
- 2tbspmilk powder
- 1cupmalai or cream
Dry Ingredients
- 25gfox nuts
- 75galmonds
- 75gcashews
- 4green cardamom
Sweetener
- 8tbspsugar
How to make Malai Rabdi with a Healthy Twist
Preparation
Whisk full-fat milk and milk powder together.
Cooking
Mix the milk mixture with malai or cream and cook on medium heat.
Coarsely grind fox nuts, almonds, cashews, and green cardamom. Add to the milk mixture.
Keep stirring constantly and scrape the sides of the pan.
After 10 minutes of constant boiling, add sugar.
Continue stirring for another 7 to 8 minutes.
Serving
Remove from flame and let it cool down.
Add to bowls of your choice, top with dry fruits and rose petals.
Serve chilled.
Tips & Tricks
Ensure to stir constantly to prevent the milk from sticking to the pan.
Use a heavy-bottomed pan for better results.
