Malai Rabdi with a Healthy Twist recipe

Ingredients

6 Servings
(1 serving = bowl)

Main Ingredients

  • 1L
    full-fat milk
  • 2tbsp
    milk powder
  • 1cup
    malai or cream

Dry Ingredients

  • 25g
    fox nuts
  • 75g
    almonds
  • 75g
    cashews
  • 4
    green cardamom

Sweetener

  • 8tbsp
    sugar

How to make Malai Rabdi with a Healthy Twist

Preparation

  1. Whisk full-fat milk and milk powder together.

Cooking

  1. Mix the milk mixture with malai or cream and cook on medium heat.

  2. Coarsely grind fox nuts, almonds, cashews, and green cardamom. Add to the milk mixture.

  3. Keep stirring constantly and scrape the sides of the pan.

  4. After 10 minutes of constant boiling, add sugar.

  5. Continue stirring for another 7 to 8 minutes.

Serving

  1. Remove from flame and let it cool down.

  2. Add to bowls of your choice, top with dry fruits and rose petals.

  3. Serve chilled.

Tips & Tricks

  1. Ensure to stir constantly to prevent the milk from sticking to the pan.

  2. Use a heavy-bottomed pan for better results.
