Maa Cholyan Di Dal (Dhabhe Wali Dal)

A traditional Punjabi dal often served in Gurudwaras and loved by Punjabi households. This recipe is a flavorful and comforting dish made with urad dal and chana dal.

Ingredients
Dal
- 1cupurad dal split (maa di dal chilke wali)
- 1cupchana dal
- 1/2tspasafoetida
- 6clovecloves
- 1tspsalt
- 1/2tspturmeric powder
- 8cupswater
Tadka
- 1 1/2tbspdesi ghee
- 1tspcumin seeds
- 1tbspcrushed ginger garlic
- 2chopped onion
- 5chopped green chilli
- 2chopped tomatoes
- 1tspgaram masala
- 1tbspcoriander leaves
How to make Maa Cholyan Di Dal (Dhabhe Wali Dal)
Cooking Dal
Wash the urad dal and chana dal thoroughly.
Add asafoetida, cloves, salt, turmeric powder, and water to the dal.
Pressure cook until 6 whistles.
Preparing Tadka
Heat desi ghee in a pan.
Add cumin seeds and let them splutter.
Add crushed ginger garlic and chopped onion. Cook for two minutes.
Add chopped green chilli and cook for another minute.
Add chopped tomatoes and cook until the masala releases ghee.
Keep 1 tbsp of the tadka aside for later tempering.
Combining Dal and Tadka
Check the dal and add the prepared tadka.
If the dal is watery, cook further for a few minutes until perfectly done.
Add garam masala and coriander leaves.
Temper with the reserved tadka while serving.
Tips & Tricks
Ensure the dal is thoroughly washed to remove any impurities.
Adjust the consistency of the dal by cooking longer if needed.
