Ingredients

8 Servings
(1 serving = 500 mL)
  • 1kg
    Kali Gajar (black carrots)
  • 4L
    Filtered or boiled water
  • 1tsp
    Salt
  • 2tsp
    Black salt
  • 1tsp
    Red chilli powder
  • 2tsp
    Mustard seeds powder

How to make Kali Gajar ki Kanji (Best Prebiotic Drink)

  1. Wash, peel, and cut the carrots lengthwise.

  2. Mix all the ingredients in a glass container or earthen pot.

  3. Cover and keep in the sun for 2-3 days for fermentation.

  4. Drink it every day as a mid-meal and eat the carrots.

Tips & Tricks

  1. Kanji can be kept in the refrigerator for a longer shelf life.

  2. Normally, its life is 5-6 days at room temperature.

  3. You can add more water and spices if needed.
