Kachalu Ki Khatti Meethi Chaat

A tangy and sweet yam chaat, perfect for a Sunday brunch. This Amritsari special is a delightful twist on the traditional kachalu pickle.

Ingredients
- 1kgkachalu/yam
- 3onion, sliced
- 2cucumber, chopped
- 4green chilli
- 1tbspginger, grated
- 1cuptamarind water
- 4tbspjaggery powder
- 1tspsalt
- 1tspblack salt
- 1tspblack pepper powder
- 1tspred chilli powder
- 1tspcumin seeds powder
- 1tspajwain
- coriander leaves
How to make Kachalu Ki Khatti Meethi Chaat
Wash the kachalu/yam thoroughly and pressure cook it for 3-4 whistles with a pinch of cooking soda.
Once cooked, let it cool and then peel and chop the yam into bite-sized pieces.
In a large bowl, combine the yam, sliced onions, chopped cucumber, green chillies, and grated ginger.
Add tamarind water and jaggery powder to the mixture and mix well.
Season with salt, black salt, black pepper powder, red chilli powder, cumin seeds powder, and ajwain.
Garnish with coriander leaves and serve.
Tips & Tricks
Ensure the yam is cooked properly; it should be soft but not mushy.
Adjust the amount of jaggery and tamarind water to balance the sweet and tangy flavors according to your taste.
