This is an age-old authentic Punjabi recipe, commonly made in every Punjabi's home. Amla or gooseberry is considered a miracle if added to the daily diet due to its medicinal properties. Do try this pickle and don't forget to keep it refrigerated for a longer shelf life.

Instant Punjabi Amla Pickle recipe

Ingredients

10 Servings
(1 serving = 50g)
  • 500g
    Amla (gooseberry)
  • 1cup
    mustard oil
  • 1/2tsp
    Asafoetida
  • 1/2tbsp
    Fenugreek seeds
  • 1tbsp
    Salt
  • 1tsp
    Red chilli powder
  • 1tsp
    Turmeric powder

How to make Instant Punjabi Amla Pickle

  1. Wash and soak the amla in water for 1-2 hours. Pat dry on a kitchen towel.

  2. Heat mustard oil in a heavy-bottom pan.

  3. Lower the flame and add asafoetida and fenugreek seeds.

  4. Add salt, red chilli powder, and turmeric powder.

  5. Add the amla and cook on medium heat for a minute.

  6. Cover and cook for 10 minutes on low heat or until tender, stirring occasionally.

  7. Cool the pickle and keep it in the refrigerator for longer shelf life.

Tips & Tricks

  1. Ensure the amla is completely dry before adding it to the oil to prevent splattering.

  2. Refrigerating the pickle extends its shelf life.
