This is an age-old authentic Punjabi recipe, commonly made in every Punjabi's home. Amla or gooseberry is considered a miracle if added to the daily diet due to its medicinal properties. Do try this pickle and don't forget to keep it refrigerated for a longer shelf life.

Ingredients
- 500gAmla (gooseberry)
- 1cupmustard oil
- 1/2tspAsafoetida
- 1/2tbspFenugreek seeds
- 1tbspSalt
- 1tspRed chilli powder
- 1tspTurmeric powder
How to make Instant Punjabi Amla Pickle
Wash and soak the amla in water for 1-2 hours. Pat dry on a kitchen towel.
Heat mustard oil in a heavy-bottom pan.
Lower the flame and add asafoetida and fenugreek seeds.
Add salt, red chilli powder, and turmeric powder.
Add the amla and cook on medium heat for a minute.
Cover and cook for 10 minutes on low heat or until tender, stirring occasionally.
Cool the pickle and keep it in the refrigerator for longer shelf life.
Tips & Tricks
Ensure the amla is completely dry before adding it to the oil to prevent splattering.
Refrigerating the pickle extends its shelf life.
