Chatpatta Pyaaz ka Achaar (Onion Pickle)

A tangy and spicy onion pickle that pairs perfectly with garam garam parantha and roti.

Ingredients
- 20piecebaby onions
- 1piecegreen chilli
- 1tbspfennel seeds
- 1tbspsalt
- 1tspdegi mirch
- 1/2tspred chilli powder
- 1tspturmeric powder
- 1tsponion seeds
- 1tspaamchur powder
- 2tbspmustard oil
- 1pinchasafoetida
How to make Chatpatta Pyaaz ka Achaar (Onion Pickle)
Peel the baby onions and set them aside.
Slice the green chilli.
In a pan, heat mustard oil until it starts to smoke. Turn off the heat and let it cool slightly.
Add fennel seeds, asafoetida, and sliced green chilli to the oil. Stir well.
Add the baby onions to the pan and mix thoroughly.
Sprinkle salt, degi mirch, red chilli powder, turmeric powder, onion seeds, and aamchur powder over the onions. Mix well to coat the onions evenly.
Transfer the mixture to a clean jar and let it sit for a day to allow the flavors to develop.
Tips & Tricks
Ensure the mustard oil is heated until it smokes to remove its raw flavor.
Let the pickle sit for at least a day for the flavors to meld together.
