Baked Sweet Potato Accordion

A perfect snack for the evening. Do try & save for later use.

Ingredients
- 700gSweet potato
- 1tspSea salt
- 1tspDry Rosemary
- 1tspOregano
- 1 1/2tspRed chilli flakes
- 1/2tspBlack pepper powder
- 1tbspParsley or coriander leaves, chopped
- 2tbspOlive oil
How to make Baked Sweet Potato Accordion
Preheat the oven to 400°C for 10 minutes.
Wash and peel the sweet potatoes, slice off the tops and bottoms to make flat edges. Slice lengthways into 2 to 3 slices of each sweet potato, depending on their width.
Place the slice between 2 chopsticks, first slice one side vertically, then flip the side and slice diagonally. Repeat with all the sweet potatoes.
Take a bowl and mix the herbs, spices, and olive oil. Brush each slice with this mixture evenly.
Bake for at least 30 minutes until crisp and golden.
Enjoy with dips of your choice.
Tips & Tricks
Use chopsticks to guide your cuts and prevent slicing all the way through the sweet potato.
