Amritsari Famous Nutri Masala recipe

Ingredients

4 Servings
(1 serving = one portion)

Step 1

  • 2cup
    soya nutri chunks
  • 4cup
    water

Step 2

  • 2tbsp
    desi ghee
  • 1tsp
    cumin seeds
  • 1cup
    chopped onions
  • 1tbsp
    ginger garlic paste
  • 1cup
    coarsely ground tomatoes
  • 1cup
    beaten curd
  • 1piece
    chopped capsicum
  • 1cup
    fresh spinach puree
  • 2tbsp
    salt
  • 1tsp
    red chilli powder
  • 1tsp
    degi mirch
  • 1tsp
    turmeric powder
  • 1tbsp
    coriander powder
  • 2tsp
    garam masala
  • 1tbsp
    anardana powder
  • 1cup
    water

Step 3

  • 70g
    butter
  • 1tsp
    cumin seeds
  • 1/2piece
    sliced onion
  • 1cup
    water
  • 1tsp
    roasted cumin seeds
  • 1tsp
    kasoori methi
  • 2tsp
    soya sauce
  • 1piece
    julienned capsicum
  • 1piece
    julienned carrot
  • 1piece
    julienned ginger
  • 1piece
    sliced onion
  • 1bundle
    chopped coriander

How to make Amritsari Famous Nutri Masala

Step 1

  1. Pressure cook the soya nutri chunks with water till 1 whistle.

  2. When the pressure releases, open the cooker.

  3. Wash the soya chunks in cold water 3 to 4 times.

  4. Squeeze out extra water and keep aside.

Step 2

  1. Heat desi ghee in a kadahi and add cumin seeds. Let them crackle.

  2. Add chopped onion and cook for 2 minutes.

  3. Add ginger garlic paste and cook for a minute.

  4. Add tomatoes and cook for 4-5 minutes on medium heat.

  5. Add spices and cook for a minute.

  6. Add spinach puree, capsicum, and water. Cook till the gravy releases ghee.

  7. Add curd and cook further for 3-5 minutes.

  8. Switch off the flame.

Step 3

  1. In a separate kadahi, heat butter and add cumin seeds and onion. Cook till golden.

  2. Add the cooked gravy and soya sauce. Cook for a minute.

  3. Add soya chunks and water, and cook further for 3 minutes on medium heat.

  4. Add kasoori methi and roasted cumin seeds.

  5. Add capsicum, carrot, ginger, onion, and lots of coriander.

  6. Top with more butter and enjoy with toasted bread or kulcha.

Tips & Tricks

  1. Ensure to squeeze out all the extra water from the soya chunks for better texture.

  2. Adjust the spice levels according to your preference.
