Authentic recipe of the famous street food of Punjab, without adding any market-made masala. Enjoy it with Kulcha or bread for a delicious meal. It offers a mutton-like taste and is high in protein for vegetarians.

Ingredients

- 2cupsoya nutri chunks
- 4cupwater
Step 2
- 2tbspdesi ghee
- 1tspcumin seeds
- 1cupchopped onions
- 1tbspginger garlic paste
- 1cupcoarsely ground tomatoes
- 1cupbeaten curd
- 1piecechopped capsicum
- 1cupfresh spinach puree
- 2tbspsalt
- 1tspred chilli powder
- 1tspdegi mirch
- 1tspturmeric powder
- 1tbspcoriander powder
- 2tspgaram masala
- 1tbspanardana powder
- 1cupwater
Step 3
- 70gbutter
- 1tspcumin seeds
- 1/2piecesliced onion
- 1cupwater
- 1tsproasted cumin seeds
- 1tspkasoori methi
- 2tspsoya sauce
- 1piecejulienned capsicum
- 1piecejulienned carrot
- 1piecejulienned ginger
- 1piecesliced onion
- 1bundlechopped coriander
How to make Amritsari Famous Nutri Masala
Step 1
Pressure cook the soya nutri chunks with water till 1 whistle.
When the pressure releases, open the cooker.
Wash the soya chunks in cold water 3 to 4 times.
Squeeze out extra water and keep aside.
Step 2
Heat desi ghee in a kadahi and add cumin seeds. Let them crackle.
Add chopped onion and cook for 2 minutes.
Add ginger garlic paste and cook for a minute.
Add tomatoes and cook for 4-5 minutes on medium heat.
Add spices and cook for a minute.
Add spinach puree, capsicum, and water. Cook till the gravy releases ghee.
Add curd and cook further for 3-5 minutes.
Switch off the flame.
Step 3
In a separate kadahi, heat butter and add cumin seeds and onion. Cook till golden.
Add the cooked gravy and soya sauce. Cook for a minute.
Add soya chunks and water, and cook further for 3 minutes on medium heat.
Add kasoori methi and roasted cumin seeds.
Add capsicum, carrot, ginger, onion, and lots of coriander.
Top with more butter and enjoy with toasted bread or kulcha.
Tips & Tricks
Ensure to squeeze out all the extra water from the soya chunks for better texture.
Adjust the spice levels according to your preference.
