Ingredients
Salad
- 1bundlekale
Dressing
- 1/2cupolive oil
- 1large lemon, juiced
- 1tbsplemon zest
- 2clovegarlic, minced
- salt and pepper to taste
Toppings
- 1/4cupgrated Pecorino cheese
- 2tbspbutter
- 1/4cuppanko breadcrumbs
- pinchsalt
How to make Zesty Kale Salad with Lemon and Pecorino
Prepare the Kale
Remove any stems from the kale and finely chop it. Add the chopped kale to a large bowl.
Make the Dressing
Mix olive oil, lemon juice, lemon zest, minced garlic, and salt and pepper to taste.
Assemble the Salad
Pour the dressing over the kale and massage until the leaves darken and begin to tenderize.
Add grated Pecorino cheese and mix again.
Prepare the Toppings
In a small pan, melt butter and toast panko breadcrumbs until they are golden brown. Add a pinch of salt for flavor.
Serve
Plate the kale salad, add more grated Pecorino on top, some more lemon zest, and pour the golden panko crumbs on top. Serve immediately and enjoy!
