Ingredients
Slaw
- 4cupsshredded green cabbage
- 1fennel bulb, thinly sliced
- 1large carrot, julienned
- 1apple, thinly sliced
- 1/2cuppomegranate seeds
- 1/4cupfresh parsley
- 1/2cupwalnuts
Dressing
- 3tbspolive oil
- 1tbsphoney
- 1/2large lemon, juiced
- 1tspDijon mustard
- 1clovesmall garlic, minced
- Salt and pepper to taste
How to make Winter Slaw
Preparation
Shred the cabbage, slice the fennel, julienne the carrot, slice the apple, and scoop out the pomegranate seeds.
Dressing
Whisk together olive oil, lemon juice, honey (if adding), Dijon mustard, garlic, salt, and pepper.
Assembly
Toss the slaw ingredients with the dressing, then fold in parsley.
Chill for 20-30 minutes, garnish with extra parsley, and serve.
