Winter Slaw recipe

Ingredients

4 Servings
(1 serving = 1 cup)

Slaw

  • 4cups
    shredded green cabbage
  • 1
    fennel bulb, thinly sliced
  • 1
    large carrot, julienned
  • 1
    apple, thinly sliced
  • 1/2cup
    pomegranate seeds
  • 1/4cup
    fresh parsley
  • 1/2cup
    walnuts

Dressing

  • 3tbsp
    olive oil
  • 1tbsp
    honey
  • 1/2
    large lemon, juiced
  • 1tsp
    Dijon mustard
  • 1clove
    small garlic, minced
  • Salt and pepper to taste

How to make Winter Slaw

Preparation

  1. Shred the cabbage, slice the fennel, julienne the carrot, slice the apple, and scoop out the pomegranate seeds.

Dressing

  1. Whisk together olive oil, lemon juice, honey (if adding), Dijon mustard, garlic, salt, and pepper.

Assembly

  1. Toss the slaw ingredients with the dressing, then fold in parsley.

  2. Chill for 20-30 minutes, garnish with extra parsley, and serve.

Tips & Tricks

  1. Add toasted walnuts for an extra crunch!
