Ingredients
Cheesecake Layer
- 1kgcream cheese
- 1/2ozunflavored gelatin
- 3ozlemon jello
- 1/4cuppowdered sugar
- 1cuphot water
Base and Topping
- digestive cookies (enough to cover the base)
- fresh strawberries, thinly sliced
- 6ozstrawberry jello
- 2cuphot water
How to make Strawberry Jello Cheesecake
Prepare Gelatin Mixtures
Dissolve unflavored gelatin in 1 cup hot water. In another bowl, dissolve lemon jello in 1 cup hot water. Set both aside to cool.
Make Cheesecake Layer
Beat cream cheese until fluffy. Gradually add the cooled gelatin and lemon jello mixtures, then mix in powdered sugar until smooth.
Assemble Cheesecake
Line the bottom of a 9-inch springform pan with digestive cookies to form a base.
Pour the cream cheese mixture over the cookie base and refrigerate for at least 2 hours or overnight.
Prepare Strawberry Jello Layer
Prepare strawberry jello using 1 cup of hot water per box. Let it cool slightly.
Arrange thinly sliced fresh strawberries on top of the set cheesecake layer.
Pour the cooled strawberry jello over the strawberries.
Final Steps
Refrigerate until the jello is fully set, about 2 hours.
Remove from the springform pan and serve cold.
