Creamy Parmesan Cannellini Beans recipe

Ingredients

4 Servings
(1 serving = 1 cup)
  • 1tbsp
    olive oil
  • 1piece
    large shallot, finely chopped
  • 2clove
    garlic, chopped
  • 2can
    cannellini beans, drained and rinsed
  • 1/2cup
    heavy cream
  • 1/4cup
    freshly grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped for garnish

How to make Creamy Parmesan Cannellini Beans

  1. Heat olive oil in a pan and add shallots and garlic. Cook until soft.

  2. Stir in cannellini beans and season with salt and pepper.

  3. Blend 1/4 of the beans with heavy cream until smooth, then mix it back in.

  4. Stir in freshly grated Parmesan and cook until perfectly creamy, adding water if needed.

  5. Top with extra Parmesan and fresh parsley.

Tips & Tricks

  1. Add water gradually if the mixture is too thick.

  2. Adjust seasoning to taste.
