    olive oil

    large onion, chopped
  • 2tbsp
    curry paste (red or yellow)
  • 4cups
    chicken or vegetable broth
  • 4cups
    frozen or fresh butternut squash, peeled and cubed
  • 1can
    coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro

How to make Coconut Butternut Squash Soup

  1. Heat olive oil in a pot over medium heat.

  2. Sauté chopped onions with curry paste until fragrant.
