  • 3cups
    frozen butternut squash
  • 2clove
    garlic, minced
  • 2tbsp
    olive oil
  • 1lb
    Italian sausage
  • 1/4cup
    unsalted butter
  • 1tbsp
    fresh sage
  • 1cup
    reserved pasta water
  • 1/2
    to 1 cup heavy cream
  • 12oz
    orecchiette pasta
  • 1/2cup
    grated Parmesan cheese
  • 1pinch
    salt
  • 1pinch
    pepper

How to make Butternut Squash and Sage Sausage Pasta

  1. Sauté garlic and frozen butternut squash in olive oil until soft.

  2. Blend the sautéed squash with a splash of pasta water until smooth.

  3. Cook the sausage in olive oil until golden brown, then set aside.

  4. In the same pan, melt butter and add sage.

  5. Mix in the cooked sausage, butternut squash puree, heavy cream, and Parmesan cheese.

  6. Toss the mixture with cooked pasta and serve.

Tips & Tricks

  1. Adjust the amount of heavy cream to achieve your desired creaminess.

  2. Use any pasta of your choice if orecchiette is not available.
